    7 Easy Lunch Ideas for Work and School

    The best part of the workweek is coming to an end and you can start planning your weekend. But before you get too excited about sleeping in, there’s one more thing you need to do: grab a snack! It’s tempting to eat something unhealthy or take-out when you’re busy—but we’ve got 10 healthy lunch ideas that will keep your energy up throughout the day.

    Sandwich loaf

    You can make a sandwich loaf using any kind of bread, but I recommend making it from white bread. You’ll need to slice the bread into 1-inch-thick pieces and then stack them in layers on top of each other. This creates a 1-layer loaf that’s easy to eat with your hands or cut into slices for sandwiches later on.

    To make this recipe, you’ll also need:

    • 1 cup shredded cheese (I like cheddar)
    • 2 eggs 1 cup milk salt & pepper to taste

    Chicken and Rice Soup

    This soup is a fantastic choice for lunch or supper since it is loaded with veggies and protein. You can add any spices you like, but we recommend using cumin and paprika because they’re easy to find at the grocery store.

    • Use chicken breasts instead of whole chicken if you have time in advance (or even if not). The breast meat will be more tender than the whole bird anyway—and it’s still healthy!
    • Use homemade stock instead of bouillon cubes; this gives your soup a deeper flavor that makes it taste better than if you used canned broth.
    • Add some sour cream or Greek yogurt when serving; both will bring some tanginess to balance out all those spices!

    Beet Salad

    Beets are a great source of folate, potassium, and fiber. Additionally, they are a notable source of vitamin C, which can help fight against cancer. You’ll also get manganese from this delicious vegetable!

    Beets are naturally sweet and can be used in diverse ways. One of the simplest lunch ideas for a healthy lunch is to roast some beets, then slice them up on top of your favorite sandwich. The sweetness from the beet’s natural sugars helps balance out the saltiness of deli meat and cheese.

    Sandwich Wraps

    If you’re looking for an easy lunch idea that won’t take up too much space in your fridge, then sandwich wraps are a great option. They’re especially great if you have a big appetite because they can be made completely ahead of time and served at room temperature.

    You can make these sandwiches with any combination of ingredients—meat, cheese, veggies, or both—and then just wrap them up tightly like a burrito. If you have more than one person at work who likes different things on their sandwiches (like me), then add in some extras like lettuce and tomato before rolling everything together!

    Mason Jar Salads

    • Make the dressing: Whisk together 1/3 cup olive oil, 2 tablespoons of sugar, and 1/2 teaspoon mustard powder in a small bowl. Add salt and pepper to taste.
    • Mix the ingredients: Combine all of your salad ingredients—the lettuce, tomatoes, and any other toppings you like (croutons are always good) in a large bowl or food processor if you have one. Pour over half of this mixture into each mason jar before adding more dressing.*Dressing should be poured into jars just before eating so it stays nice and fresh!

    Baked Potato Bar

    What you need: 1 baked potato, melted cheese, and toppings of choice (optional)

    How to make a baked potato bar:

    • Place the baked potato on a plate and top with your desired amount of cheese and toppings. If you have time, pop it in the oven at 350°F for 20 minutes or until crispy on top! For an extra kick flavourvor, add some black pepper or red pepper flakes for a bit more heat.

    Meal Prep Pasta Salad Jars

    Pasta salad jars are an easy way to get your kids to eat healthy food because they’re a great way for kids to help prepare their lunches. They also make it easier for you and your spouse/partner (or whoever else is helping) when cooking together in the evenings.

    You can put each serving of pasta in its jar, or use one large jar with two smaller ones inside if you want more servings per container. If there are any leftovers after lunchtime, just place them back into their original container and store them in the fridge until tomorrow morning—they’ll last up to five days!
